Recipies from Liz's support group (LONG with LOTS of recipies)
Oh Yeah, Stuffed Zucchini
4-6 small to medium zucchini
3 cloves garlic
1 package frozen spinach ( the liittle suare frozen one)
1/2 c parm cheese
1/2 c FF Mozzerella cheese
1/2 large onion finely chopped
1 whole egg or 1/3 c egg substitute
salt
pepper
cooking spray
Bring a large pot of water to a rapid boil, cut the ends off the zucchini and add it to the boiling water. Allow to boil for about 10-15 minutes.
Squeeze all of the water out of the spinach and put it in a large bowl. To that add the finely chopped the garlic, onions, cheese, egg and salt and pepper to taste.
Once the zucchini is mostly cooked through, remove from the boiling water. Scoop out the insides and chop them up and add to the spinach mix. make sure to leave a little meat in the zucchini so that the skin maintains it's shape.
Fill the zuchinni shells with the spinach zucchini mixture making sure to mound up the stuffing in the middle. Sprinkle parmesean cheese over the top and place in a glass baking dish. Spray the top of the zucchini and cheese topping lightly with cooking spray.
Set the oven for 350 and bake for 30-40 minutes or until the cheese begins to brown.

She ate it!!! She was leary knowing that it had BOTH spinach and zucchini in it. But, I had her help me make the filling and she said she SORT OF liked it. She ate it all without complaining, so I would say it was a hit!! Usually if she doesn't like it I have to tell her that she HAS to eat a portion of it and that is all she will touch. This, she ate. I will definitely make it again!!! YEAH!!!
I also made the buffalo chicken meatballs and we had the truffles for dessert!!
