Nicer Than Rice...Mock Rice pudding
Even my Son and Hubby enjoy this one. I've guesstimated it to have about 25 g of protein. Enjoy
1 Cup low-fat (1%) cottage cheese, small curd
1 tsp. instant sugar free vanilla pudding mix
3 Tbs. skim milk
2 tsp. raisins
Sprinkle of cinnamon
1) Combine cottage cheese and pudding mix.
2) Add milk and stir. Add raisins and cinnamon, and stir again until all ingredients are evenly combined.
3) Cover and refrigerate for 15 minutes.
