Roasted Chicken

I know some of you are trying to think of what to fix for thanksgiving... so I wanted to toss out how about roasted chicken for any holiday dinner...

I saw Ina make this today and oh man it looks soooooo good!!! And don't forget once you have finished getting all the meat off the bones you can now make homemade chicken stock...

I actually made this recipe this weekend...DELICIOUS! The best roast chicken i have ever made..very flavorful! Definitely a great alternative for Thanksgiving.

What I loved about it was that it was really low fat... yes there is butter on it... but we don't eat the skin after surgery... so to me it was just a sealer to keep the meat moist under the skin lol...
