Hey Steve and PA forum.

I have a question as you are, in my opinon, the PA forum fish authority.  Have you ever heard of or more important to me do you know where I can get wolffish.  I read about how really good it was in an article and lost the article.  It was one of those Philly restaurant reviews. 

I would really like to try it.  I love all kinds of fish.  Also do you know who has the best Chillian Sea Bass.  I marinate it and gril it, but because of the cost I only get a few times a year.  I usually buy my fish at Shop Rite on Aramingo Ave, but they haven't had it for awhile.

Anyway, thank if you can give me any info.

Read your post about cheesesteaks.  MHO is that Pats and Gino's are really overrated!!!!  Having been a regular after clubbing in the 80's, they are just not worth the calories.  I would have chosen Steve's also.  Funny since my surgery, I have lost my taste for cheesesteaks.  I would rather have a grilled steak and a piece of french bread.  Your taste really do change after the surgery and mine really change even more after I had my panni and hernia repair.

The best place to go isn't exactly the nicest area, but Lawrence Street is the place to go in Philly. They open really, really early (most are there at 5 am, and it's a ghost town at 11), but you can get just about anything there. here is a company that I recommend: http://www.efrankhopkins.com/aboutus/index.html

You can get whatever you want there, and they do cash and carry.
I would be interested in the article you read. I don't truly believe they are serving Wolffi**** is primarily exported, and is caught in the Boston area. The same guys that get scallops get wolffish.

In any event, it is very common to substitute species of fish, because the consumer doesn't know. And once you've added sauces, it's really hard to tell.  Many sushi restaurants sell Izumidai.  Izumidai is the Japanese word for Red Snapper.  However, often times tilapia is used instead. Tilapia costs about 1/2-1/4 of the price. You can ask them to show  you the Izumidai, and it looks like this: http://www.alwaysfreshfish.com/fresh_tilapia.html, it's tilapia.  Here is what Red Snapper looks like: http://www.alwaysfreshfish.com/fresh_red_snapper.html. The easiest way to tell is the shape. I find tilapia to look mitten-like.   

I would venture to guess if it's not genuine Wolffish, that it's a Cod species. It's also caught in the North Atlantic. 

I know this is probably more info than you needed, but the two places on Lawrence Street are very reputable companies. If you try both, and neither have....I would venture to guess that it's a substitute that was used.  This are two of the biggest guys in the Philly Fish Market.

This is great information.  I used to go the the fish markets down on Lawrence Street.  It has been many years.  I probably will take a trip there in October when I am going to do some stocking up.
