Sausage Egg and Cheese Breakfast Muffins

I make a casserole for Christmas morning that is very similar but it has bread in it - I have made the cups with a bread "crust" before too - but these sound super yummy! I am definately going to make some - hubby will love them too!

I have made these. I do find the paper cups stick so I would suggest sicking to the spray. You can use anything in them. My favorite is zucchini or spinach.  L/f ham ,cheese, peppers and onions are good too. I use the mini muffin pans and whatever produce they have reduced at the market.  Use your imagination on this one. There is so many possiblitities. Anything left over works great too.  You will love them !  See you lighter. Joanne
