Ginger Chicken Stir-Fry
Here's a perfect weeknight dinner - it tastes great, it's loaded with colorful, fresh vegetables, and it's very easy to prepare!


Ginger Chicken Stir-Fry

Cook Time: 20 min.

Ingredients:
2 tsp. cornstarch
1 1/2 cups Swanson® Chicken Broth (regular, Natural Goodness™ OR Certified Organic)
2 tbsp. low-sodium soy sauce
2 tsp. lemon juice
2 tsp. fresh grated ginger root OR tsp. ground ginger root
Spray Oil as needed 
1 lb. skinless, boneless chicken breast, cut into strips
4 cups broccoli flowerets
2 medium carrots, sliced (about 1 cup)
1 small onion, chopped (about 1/4 cup)
1/4 cup chopped fresh cilantro leaves OR parsley leaves
3 cups hot steamed broccoli florets or steamed cauliflower or any of your favorite veggies such as zucchini or eggplant as a substitute for rice(optional)


Directions:
Mix cornstarch, broth, soy sauce, lemon juice and ginger until smooth. Set aside.

Heat spray oil in medium skillet over medium-high heat. Add chicken and stir-fry until browned and done. Remove chicken.

Respray pan and over medium heat, add broccoli, carrots and onion and stir-fry until tender-crisp.

Stir cornstarch mixture and add. Coo****il mixture boils and thickens, stirring constantly. Return chicken to skillet and heat through. Sprinkle with cilantro. Serve over steamed broccoli florets or steamed cauliflower or whatever veggie you have chosen as a substitute for rice, if desired.

Serves 4 non wls people, probably 6-8 wls people.

Don't let anyone ever get away with telling you that surgery is an easy way out.  Success takes planning and conscious decisions.  One day at a time we will all be free.
