It's kinda hot again!
I have found my eating to be rather "odd" because of all of this hot weather. I find myself wandering around Safeway, knowing I'm really hungry, but nothing appeals. Not anything to do with post-op, hot weather has always affected me that way.
I made a meal of the following and it really hit the spot. I thought to myself "this would have been a pretty good meal in those early months". Now I hesitate to ever recommmend anything to anyone post-op, because who knows what one person can tolerate at what point....but knowing what point you are at this might be a good lunch?
Assemble these little treats:
New York Panetini oven baked Italian toast (Safeway deli dept.)
Fresh basil leaf
Slices of marinated mozzerella balls
Thin slices of cherry tomatoes
Drizzle olive oil and vinegar (very optional)
For me - I did a lot of crackers with a little bit of protein on top for lunch. I thought this was a fresh variation on that.
Also....further out - I loved (still do) the vegi-delite pizza from Pappa Murphy's. It's the pizza experience with only a paper thin crust.

I was sooooo happy to read your post today. My surgery is Friday and I have started feeling very nervious and such. I'm on the 3 day liquid diet and when I left for work tonight--the kids were all eating pizza. I started thinking about never being able to eat PIZZA again (which I love) I took a bite of my daughters and just savored the flavors. All the way to work--I've been thinking do I really want to do this.
I was thrilled to see your post--I had it in my head that pizza was completely out of my life. I know it still will be for a long while, but its really nice to know down the road I'll be able to enjoy some vegi-delite. Funny how your mind works! Thanks again for your post and the little treats sound scrumpious.
