Turkey Quinoa Edamame Soup

Hi folks,

A couple of people asked for this recipe. Here you go!

Turkey Quinoa Edamame Soup

Ingredients
2 tbsp olive oil
1 onion, diced
2 cloves garlic, diced
1 carrot, chopped
2 celery stalks, chopped
1 lb ground turkey
2 tbsp each dried oregano & thyme
Salt and pepper to taste
2 cups edamame
1 package frozen chopped spinach
2 cups quinoa
8 cups low-salt chicken or vegetable stock

Directions
1. Heat oil over medium heat in a heavy pot.
2. Add onion, garlic, celery and carrots. Coo****il tender, about 5 minutes.
3. Add ground turkey coo****il cooked through.
4. Add salt, pepper, oregano and thyme, and stir to coat.
5. Add edamame and spinach, let cook 3-4 minutes to begin defrosting. Stir regularly.
6. Stir in stock and bring to a boil. Reduce heat and simmer for 30 minutes, uncovered.
7. Add in quinoa and cook for a further 15 minutes, or until quinoa is cooked.

Thank you.. and.. I?m allergic to soy so I will make it without it do you suggest any substitutes for edamame?

Ahhh, no edamame for you!

It might come down to taste preference. You can substitute for something like Lima beans... similar consistency and nuttiness. Or if you prefer something a bit sweeter, you could do frozen cut green beans or peas.

I would say try Lima beans though! :)

I was not a fast loser but who cares as long as you get there! I know the newbies check the trackers and the signatures so although I kind of lost track of how the rest of the weight came off, you should know that it was not fast and furious but it was slow and steady!

current BMI 24.7 that, my friends, is NORMAL!!! Strong is the new pretty!
