Hi Ziz,
Its 4 cups shredded zucchini, 2 large eggs, 1/2 cup grated Parmesan, about 4 oz of mozzerella and 2 oz of cheddar. Mix this all together and bake at 400 for 20 minutes.
Then brown 1lb of ground beef with one chopped onion. Mix in 15 oz can of tomato sauce. You spread meat mixture over top of your crust then top with another 4 oz of shredded mozzarella and 2 oz of cheddar and half a chopped red pepper. Bake for another 20 minutes till heated through and bubbly.
It makes 8 servings, higher in calories than I would normally eat in a meal but high in protein too so it will be a treat. Should freeze well as its like a lasagna really
