New product at Costco- Kodiak Cakes- Flapjack and Waffle mix

So before you all go shaking your fingers at me...I know the carb count is high. I won't be eating them every day or twice a day. The box also suggests substituting milk for the water or adding an egg for another protein boost. They were offering samples and I have to say that they are delicious to me. The demonstrator was making little 2" sized pancakes and said that 1/2 would make 9 of them. I doubt I could eat 9. I will make some for breakfast and see how far it goes. The box cost $14.99 here in Canada.

Hey there, thanks for sharing.  Every time I go to Costco I end up eating samples of things I know I should not be eating, it never fails! 

Unfortunately to me it looks like the only extra benefit this product has over a regular pancake mix is that it does not use bleached white flour and has a little more protein than a regular pancake.  In other words, it may be a tiny bit healthier overall but for me it is not a good choice for weight loss.

I would never buy this product as it has 25g of net carbs per serving and you are buying a huge amount by purchasing it from Costco.

I still find even this one more carby at 5 net carbs then I would like so I don't use it often, but it hits the spot when I feel the need for pancakes.  I have it with this no-carb pancake syrup:

Omg last time I sampled hummus and ended up buying 6 of them because, as the saleslady kept repeating, "they freeze so well".  That was 8 months ago and I still have 5 out of 6 containers in my freezer!  Samples are a powerful thing for sure ;0)

Here is another recipe for psyllium egg wraps that has zero carbs.  They can be frozen, eaten hot or cold.  Heated they are very similar to crepes:

You can buy psyllium at bulk barn if you want to try it out.  Probably my most used recipe post op, I like it best warm with nsa jam and a little pb.  I used eggwhites in a carton instead of fresh eggs and it works just fine.

Now that you have heard a resounding "NO" on the flippin' Costco flapjacks, here's an alternative for you. Just copied this from" WLS For Dummies":

Berrycotta Pancakes

Yup, you can still eat pancakes. These pancakes are made with whole-wheat flour for some added fiber and ricotta cheese to give you a protein boost to start your day. If you have any extra, these pancakes freeze well and can be reheated in the microwave for a quick breakfast on another day. Regular syrup has loads of sugar, so serve these pancakes with sugar-free syrup or a dollop of 100 percent fruit preserves.

Stage: Soft foods

Preparation time: 10 minutes

Cooking time: 10 minutes

Yield: 6 servings (2 pancakes each)

3?4 cup whole-wheat flour

3?4 cups all-purpose flour

1 teaspoon baking powder

1?4 teaspoon baking soda

1?4 teaspoon salt

1 1?2 teaspoons sugar

2 tablespoons melted butter

3?4 cup part-skim ricotta cheese

1 large egg

1?2 cup orange juice

1?3 cup nonfat milk

1?2 teaspoon vanilla extract

1 cup blueberries, fresh or frozen

1 In a bowl, combine both flours with baking powder, baking soda, salt, and sugar. In another bowl, whisk together the butter, ricotta cheese, egg, orange juice, milk, and vanilla.

2 Combine and stir the wet and dry ingredients until just blended. Gently stir in the blueberries.

3 Spray a skillet or griddle with nonstick cooking spray and heat over medium heat. Spoon a small amount of batter onto the hot skillet and cook for about 2 minutes or until browned on the underside, then flip the pancake. Coo****il golden brown.

Vary It! Substitute the blueberries with diced apples or peaches.

Per serving: Calories 229 (From Fat 69); Fat 8g (Saturated 4g); Cholesterol 56mg; Sodium 272mg; Carbohydrate

32g (Dietary Fiber 3g); Protein 9g; Sugar 8g.
