How do you keep the frittata from getting tough?

I do like you guys do with the egg bites.  I just cook the whole thing one day then just reheat one piece at a time in the microwave.

Of course!  and really much easier to cook and clean up from.  When I used to make eggbites I did them in throw away foil cupcake tins as I couldn't stand trying to clean our my regular tins.

I am going to make it that way in the future.  I stopped making eggbites for awhile as I grabbed them too often from the freezer and nuked with cheese.

I sometimes slightly undercook it so the minute to 90 seconds in the micro finishes it up without drying out.  I've never actually made them in the muffin tins as it's so much easier to just put in a 9x13 or pie plate and the one with brussel sprouts, I do in the frying pan then finish in the oven.
