Good morning everyone.  The insomnia bug is back (@#^&*).  Actually had an OK visit with the inlaws last night, which hardly ever happens.  Came home with some awesome leftovers, which means less cooking for me - hooray.

Today it's swimming, total body toning Zumba (this hurts so good), errands, household drudgery, nap, dinner and an early night to bed.

Morning

I had a great weekend playing golf yesterday and watching golf yesterday.  Football on Saturday night too.  I like my sports!  Brooke Henderson won her first LPGA event in Portland Oregon.  She is 17 and blew the field away - fantastic to see.

Today, I have to buckle down and do some work on the house.  Also spend a little time with a friend in need.

Karen the soup is so delicious- expensive but worth it.  I just begin with onions and celery in a huge pot and then add tons of veg - always cauliflower that I break down as everything comes to a boil.  Carrots - mushrooms - stewed tomatoes zuchinni etc etc.  I grill the steak and then cut it up into the soup.  I do not add potatoes or other starchy veg or pasta.  TB of shaved parm on top and voila.  ( I dont add salt - enough in the stewed tomatoes - lots of fresh ground pepper)

Damn that sounds awesome. I have a bunch of tomatoes from the garden to get using, I'm seeing a similar thick "soup" on my menu this week. I bought a cauliflower yesterday to make some cauli mash, but will definitely save some for this.

I bought 4 last week when they were on for 99 cents. We ate grilled cauliflower for days. LOL  I still have some in the fridge and I will just throw it back on the grill to get it nice and crispy again.  I've made Barb's soup a few times and it is really good.  Am sure we make it slightly different but still similar, very very good.  Love it in the winter.

Also want to mention that I add only a few carrots as they have high sugar.  I want this soup to be delish but low in calories, high in protein and not too bad in the carb or sugar stats.  I also add fresh herbs - dried if thats all I have on hand.  Mostly italian style

"Back on the horse" - that's what we do. :)
