Another gorgeous day out there! I've been incredibly lucky to be off this week and able to enjoy it. Plan for today equals time on the patio, taking myself to see Jurassic World (Andrew won't want to see that one), testing out my new floor steamer thingy (this could be setting myself up for extended floor cleaning, may have to keep any good results to myself at this point lol), a drive-by to the local outdoor pool to see just how many kids are invading it and whether it would be in any way enjoyable to swim there later this afternoon/tomorrow, not sure what else. I'm finding myself scrounging for snacks, which is NOT good and I attribute this to boredom/lack of purpose - though I don't think that steaming the floors will avert that. LOL!

D - my sinful homemade mac & cheese that Andrew has been (not so subtly) hinting at - I'll eat a couple of bites but have leftover pulled pork and coleslaw instead for dinner
S - not sure I'll need one after this carb-o-licious day

Good morning everyone. Just some last minute packing and then I am ready to go to the cottage for a week. Going to get a chance to swim, I have not swam since my surgery, I just realized this, should be interesting. Also intend to go berry picking, kayaking, canoeing, go to the beach. Also intend to lounge around reading a good book and go to the drive in.
Made pressed cottage cheese pancakes yesterday, so have been munching on those, they turned out great. Just whizzed up in the blender until batter-like consistency: 8 eggs. 2 cups pressed cottage cheese, few tbsp. lemon juice, 2 packets true lemon, 1/2 c skim milk, 1/2 c coconut flour, a tsp baking soda, and sucralose to taste, fried them up 3-4 minutes per side on medium heat. I actually prefer them plain without anything on them, and they are very filling. This makes a lot, like maybe 24 little pancakes, I now have a bunch frozen in my freezer for snacks, 15g protein per 2 pancakes!
I got on the scale today and was down 5 pounds from my last weigh-in, putting me at 165lbs, which is exactly 102lbs lost from my pre-opti weight on July 24 2014. All I can say is that I am so thankful and happy to feel healthy again.

s - pressed cottage cheese lemon coconut pancakes
l - cucumber with chicken almond cranberry salad and feta cheese
s - same as morning snack
d - whatever my family is making - veg and protein only, maybe a bite or two of other stuff if tempted
s - p28 toast with pb and/or nsa jam

Hi folks! Your menus all sound tasty, lots of good ideas. Today I'm just working away as usual. Will go for a long walk after dinner.

Morning everyone. Very sleepy/tired today although i had an early night and slept like a baby, Work and then home to relax today and not much else planned.
B - 39g bran buds, 1/2 cup almond milk unsweetened with protein powder
L - 1/2 cup cabbage stewed, 2oz pork
S - 1oz cheddar
D - will be at work meat and veg of some sort
S - milk, 2oz pork chop
Totals: 867 cals, 45 carbs, 40 fat, 80 protein
