Hey cc, here is the recipe:

3/4 cup pumpkin puree
1/2 cup chopped nuts
1/2 cup shredded, unsweetened coconut
1/3 cup almond flour
1/4 cups sunflower seeds
1/2 cup oat bran
1/4 cup pumpkin seeds
1/4 cup sf chai davinci syrup 1/4 cup granulated splenda
2 tbsp flax seeds
1/2 tsp vanilla extract
1 tsp xanthan gum
1 large egg, lightly beaten

Preheat oven to 400F and line an 8×8 inch pan with foil. Butter or grease the foil.In a large bowl, combine all ingredient and stir together until well incorporated. Spread in prepared pan. Line top with plastic wrap or parchment paper and press firmly and evenly into pan with the bottom of a glass or flat-bottomed measuring cup. Peel away plastic or parchment. Bake 20 minutes, until center is firm and edges are golden brown. Let cool in pan and then cut into 12 bars.

It is loosely based on this recipe: http://alldayidreamaboutfood.com/2011/10/pumpkin-spice-seed- bars-low-carb-and-gluten-free.html

I changed the ingredients somewhat to make it higher in fibre, lower in fat, calories, and carbs.  You may want to taste it to see if the sweetness is enough for your taste, I do not like sweets much in general. Net carbs should only be 2 per square.  I want to try adding protein powder and/or baking cocoa to the next batch to up the nutrition and play with the taste. These freeze well and are nice with a little pb on them.  If you try them let me know what you think. Have a nice night...

No problem, let me know if you like them.  I am going to make another batch this morning to use up the rest of the pumpkin.

Hey there.  I often do not stick to the plan 100% and will sub in something of roughly equivalent nutrition according to my mood and level of hunger.  If I am really not hungry but know I need the calories and protein I will have a protein shake, easier to get in than eating when I am not hungry.  I have to try those parm chips with fresco salsa, I would also like the link please.
