Hi Nia, where do you get your turkey sausage crumbs, or do you make them yourself?

Morning CC. The turkey crumbs are nothing special, just left over turkey meat from the night before, lol. It was just crumbed up when i cooked it.

I got a little excited there for a minute.  I've seen on the RNY What are you eating? thread that some of our US posters have turkey sausage crumble with their eggs and I was so jealous.  For a second I thought we could get them in Canada, lol.  Oh well, if I ever get my butt in gear, I should figure out a recipe for turkey sausage and make my own crumbles and freeze them.

LOL CC, sorry to get you excited there for a min. It did take once though.

I've made a few home made turkey sausage patties.  Tried a couple of recipes then tweaked them to my liking.  I preferred them with 2/3 extra lean turkey and 1/3 extra lean pork, all ground together then added stuff and froze them in patties and would cook them as needed.  Some I would eat as a patty and others I'd just crumble later to add to scrambled eggs.  There are tons of recipes on the net to try.

This is the one that I liked the best.  We can't buy 93% fat free here, it's all the 99% fat free one and it's just too dry so added the pork to give it a bit of fat.  Next time I make them I am going to grind my own turkey and use a mix of breast and thigh to keep it all turkey but to add in some fat.

Morning Barb, enjoy your golfing! And hello everyone else too. :)

Today: Just work, then home. Hoping to hear today (or hopefully in the next few days) about a temporary position I competed for. Also, we're having our sewer pipe dug up and replaced today, which means they'll be demolishing part of our front porch. Hubby will be home for that.

It's strawberry season, yay! I bought three quarts at the farmer's market this week. So, I'm having it twice today. :) It's a relatively high fat day today, but the main culprits are the salmon I'm having for supper and the egg salad I'm having for lunch, so I'm not going to worry about it too much.  Not sure what I'll have for an evening snack today. Might involve strawberries somehow, LOL.

2.5 YEARS POST-RNY

B - 1/2 cup light ricotta/vanilla/stevia mix, topped with 1/2 cup chopped strawberries

S - 1 cookies and cream Quest protein bar

L - Egg salad on 1 slice of P28 bread

S - 1/2 cup light ricotta/vanilla/stevia mix, topped with 1/2 cup chopped strawberries

D - Marinated, baked sesame salmon, with a few asparagus wrapped in prociutto

S - Not sure. Probably something to do with strawberries and some kind of protein on the side!

TOTALS (without evening snack): 113g protein, 64g fat, 64g carbs, 26g fiber, 1209 calories

Enjoy your day, everyone!

Your menu looks so good, I think I'll go to the Farmer's Market tomorrow and get some strawberries.  I really like them in salad, on yogurt, in smoothies, but the concoction of ricotta and strawberries is sounding pretty good.
