I'm almost 4 years out, and I still have problems with some things. Dense foods are one (like steak, chops, etc). Also, dry foods. Some foods end up dried and need a sauce on it. Or being cooked in a sauce. This is OK, jus****ch the fat and sugar in the sauce, and account for it. Pork is hard to digest for most people. That is one meat, in any form, that I only eat small amounts of.
As for the carbs, I agree with Karen, limit what you take in. Make sure you are getting your protein levels in first, and veggies.
Some veggies are harder to eat than others. Steaming/cooking them make them easier to eat. I do enjoy salads, but most of that is cut up really small. I know that I can eat cooked apples, but have a hard time with raw ones. I know that's the same with some harder veggies too. Steaming them as opposed to boiling them keeps the nutrients.
A lot of the troubles we have are found out by trial and error. And trying different ways to eat them (raw, steamed, in stews etc). Some people can't eat eggs in certain forms, but in other forms are fine. I have a hard time with regular milk, so I chose alternates like rice, oat or goat milk.
The first while is a learning curve, but you'll figure it out.
