Awesome recipe to for little almost pancake bites

Hi,

I can across this recipe on facebook.  I must note I am ten.5 months post op and am not able to eat eggs (they do not sit well).  I also can't tolerate pancakes.

This recipe allows me to. make little banana pancakes from two ingredients - 1 Banana and 2 eggs.  Makes many little pancakes that are sweet and healthy and good snacks and allow me to eat pancake like treats with the protein from the eggs.

Recipe 2 eggs + 1 banana

you cut the banana into slices and mix it with the two eggs with a wisk in a mixing bowl until banana is mostly mashed and it is a fluffy looking batter.

Lightly grease a pan with oil of your choice.   fry little batches in a pan.

Yummy!!!!!!

Okay, those sound yum!  I'd even put a little smear of nut butter on it!  Or ricotta!  Thanks for the treat idea. :)

I ate those a lot at the beginning, as it was the only way I could tolerate eggs.  If you add cinnamon to the batter it tastes yummy.  They are good cold with nsa jam etc.

Another good recipe was provided by Zizzler awhile ago...its 3 ingredient wraps...made with egg whites, psyllium husks and milk ( I use almond milk)...

They are great as a crepe too..with ricotta and some fruit, turkey and gravy etc.  I eat them cold sometimes with pb and nsa jam.   The recipe says it makes two, but I do them thinner and make 3 or 4.

I make these all.the.time for myself and my guy except I add things to mine as follows..

Banana protein pancakes: 4 eggs, 2 bananas. Blend it in the magic bullet. Put in a measuring cup and add a scoop and a half of vanilla protein powder, ground flax seed and cinnamon. Cook 'em up in coconut oil and eat em! I added dark chocolate chips and crushed walnuts to a few on this occasion. Usually I don't add the chocolate but I ALWAYS add unsweetened shredded coconut and walnuts as well now
