What are you doing/eating today? (Sunday)

Have a safe trip Pat.  You are so going to love the warmth and sun.

Yesterday I had a wonderful meeting with another member of this forum for coffee, such a lovely lady.  Must admit, I was a little wired because I forgot that earlier I had ordered the largest coffee from Starbucks and forgot to say decaf.  Give a girl that much caffeine when she hasn't had any in 7 1/2 months and she will be bouncing off the walls.  When I was at Starbucks I bought a bottle of sugar free Cinnamon Dolce, yum.  Because I was hopped up on full octane coffee, I got so many errands done yesterday, but my back paid the price for it later in the day.

Today I will be taking it easy and give my back a rest because tomorrow I want to try swimming.

Sorry you are feeling crappy Tracey.  Keep drinking that ginger tea and have a nice soak in a hot bath.

No bath for me, I find the idea of baths disgusting.  Hot showers only for this chick :)

Morning all :)

Tracey, I hope you are feeling better soon!

Up pretty early today after a crappy night of sleep - first time in a long time, relative to my screwy sleep patterns. Just house stuff and week prep on the plan today other than a single outing to fill the car and get a car wash so that I can actually tell my car is red and doesn't look like I jumped from slush puddle to slush puddle. Not sure what else other than feeding my Walking Dead addiction at 9. Oh, and I am going to make muffin-tin meatloaf topped with cauliflower mash - meat cupcake = win win!

 8.5 years post-op

- coffee with cream x 4 over the day -

B - Premier protein shake

S - plain Greek yogurt, homemade SF cranberries, sprinkle of toasted almonds

L - meat-cheese-pickle roll-ups (3) - made with PC Angus roast beef (the only deli roast beef that I will eat, the only one that actually tastes like roast beef lol), old Balderson cheddar, Strubs full sours, smeared with horseradish - YUM!

S - likely a Chike protein iced coffee

D - meat cupcake (beef and cauliflower), green beans

S - likely just tea or a Bengal Spice fog if Im wanting something a little sweet

Have a great Sunday!

K. :)

Full sour pickles are the best, especially with deli meat! I will have to try the pc angus deli meat, sounds great. I too like horseradish with beef, great combo.  Can you freeze your meat cupcakes?  I have had some trouble in the past freezing cauliflower mash so I am curious it is ok.

Hmmm... not sure about the mash on top, actually. I know the meat part will freeze well as I make muffin-tin meatloaf all the time, I'll have to let you know about the mash!

Thanks Karen, I think there must be a way, do you remember those blue menu shepherds pies with cauliflower mash?  They froze well so maybe it depends what you add to it?  I was thinking of making shepherds pie soon and am undecided as to whether to use sweet potato or cauliflower for the top, I would prefer cauli as it is lower in carbs.

Apparently the mashed cauli freezes really well from what I've read on the interwebz. I think it depends on how well you drain it after steaming/boiling and what you mix into it. I'll be adding some milk, a little herb & garlic cream cheese, a little grated old cheddar and lots of pepper. More news to follow. lol
