I was very please that today I tried liver for the first time since surgery and can tolerate it well.  I was craving it and am so happy I could finally eat it.

I'm so glad to hear that.  I love liver and was wondering if I was going to have to stop eating it after surgery.  Its such a great source of iron.

I had to giggle at this post Kelly! I was going to say ..... 'said no one ever'  about the liver!  But I am glad that you can stomach something that you really wanted :)

:) yes I guess liver is not a favourite....It is just nice to find something besides fish and chicken that I can tolerate really well.  I find since the surgery beef, especially ground i**** and miss and i am not a fan of pork.

Please tell me how you cooked it..I used to do the whole bacon, onions thing and I do miss it.  I know a lot of people have an aversion to liver but there are a group of 5 of us that gather together when it is time for a liver feed.

Hi,

I do it real simple, I bread it using an egg and whole wheat Panko with parsley and quick fry it in a bit of olive oil.  I cut it up into smaller pieces so it cooks quick.

You can add any flavouring you want to the Panko but I like things plain.
