Good morning everybody

Hope all are well and doing something ineresting

first time 5 minutes of moderate dance listening to the oldies - 33 calories

This afternoon/ evening 15 minute slow paced walk on flat side walk with walker - 122 calories

S- 2 cups Chicken broth

B-1 Diabetic Strawberry Boost and 1/2 cup diet oarnge jello

S- Decaf coffee

L- 1 Bottle Diabetic Strawberry Boost and 1/2 cup cream of wheat

S-

D- 1 Bottle Diabetic Strawberry Boost and 1/2 cup Liberte Greek Plain Youghurt

S-1 or 2 boxes Allens Apple juice if needed and 1/2 cup cream of Wheat and 1/2 cup Liberte Youghurt

7 Months Post-Op

B- Smoothie vanilla (premier protein shake, 1/2 banana,1c skim milk, sugar-free strawberry syrup)

S- source greek yogurt, strawberries, grapes, decaf coffee with 2 milk

L- Thai chicken quinoa salad w/ tons of fresh veggies

S- Babybel cheese, almonds, cherry tomatoes

D- Fish tacos in lettuce wrap and spinach, pine nuts and feta salad

I use this recipe and alter it a bit. I use a lot more veggies, add chicken, no sugar, substitute the veg oil for either, coconut, peanut or olive oil and cook the quinoa in chicken broth. Every time is different but it is always super tasty no matter the variation. I usually have to double the recipe (at least) as the kids devour it, too. It's a super popular cold salad on these warm days.

I'm having an epiphany of cooking the quinoa in 1/2 chicken broth 1/2 coconut milk.

Oh my. Kitchen plans tomorrow! Will post on the recipe board when I get it all figured out and awesome!
