You may want to try eggs again - something that isn't tolerated today, may be tolerated tomorrow - and vice versa!

I've attempted then twice since and they just don't go down the same, it's like they are sitting and waiting in my chest. Waiting for what I don't know, but they feel heavy. Lol

I made them poached and scrambled and it wasn't happening. I will give it another week or so and try them again.

I make a "pancake" out of 1 egg and 1/2 a banana in the magic bullet. Spray a non-stick frying pan with cooking spray. Pour mixture out and cook on med heat. Flip and then serve. I make the pancakes small as they are easier to flip.. No need for syrup or butter. They are light and fluffy.

Throw in some protein powder and up your numbers even more!  Or make a Muffin in a Mug and enjoy that as well.

Hey Kimber!

I bought this book a few weeks back to help me out after I have my surgery.. I was reading through it and it looks great! It categorizes all of the recipes into either the pureed stage, minced stage, soft solid food stage.... it looks like it will be a big help to me. Just thinking that maybe it could help you out as well!
