Glad to hear they are yummy.  I see you used 10 eggs, does that mean you used the large muffin tins, as I use 5 eggs and mini muffin tins and get 24.  If so, do they still cook for the same amount of time?  

ETA:  Never mind, I just read your WHOLE recipe.  Couldn't get past the ingredient list the first time cuz I was drooling too much :)

Ya - I wanted to make a double batch and didn't read the small print in the original recipe that said "MINI" muffin tins.  Figured it out when I started pouring it in the big tins and ran out of stuff at 24.  These are so delish - I just want to eat these all day.

Oh and they have some spice.  Yum.  Didn't even need Franks on them for the kick.  My DH and DS liked them too (although they both complained they were a bit spicy), so I had to hide the rest in the freezer.

I figure this will be an easy go-to next week when I'm too sore to cook!

VERY good idea!  I'm going to make these, Erica - wow. 

I took some of mine out of the freezer and put them in the fridge to warm up later.   Went into the fridge - GONE!  Joe has discovered egg bites, damn him!  LOL

Bugger!!  I made the DELISH cookies with SF chocolate chips and peanut flour (think tiny, SF peanut and chocolate cookie dough candies).  My DH's favorite flavours.  I hid them in the freezer.  I hid them GOOD.

Here you go!  I had to look hard to find my post with this in it...glad I did cause I'll want to make them again!!  Gonna bookmark it this time!

LOW carb Peanut Butter Chocolate Chip Cookie balls...

Ingredients

Directions

Mix all ingredients well in the order they appear. Scoop by teaspoon and roll into a ball on a cookie sheet. Bake for 12 minutes at 350 degrees.

Enjoy!
