OMG yum- pizza flavoured egg bites!
Not for the weak - these are nice and spicy. And delish!! I adapted this one from a "eggface" recipe and I LOVE it. Her site says these bites freeze well - so I'm going to do that. Or they keep 3 days in the fridge. So I'm keeping some for snacks and some for later! I did the nut. info on daily plate and they are about 110 cals each and 8g protein. One muffin filled me up.
Erica's Pizza Bites
1 red onion, diced
4 oz cremini mushrooms, chopped
4 cloves garlic, minced
10 thai chili peppers, chopped
1 tbls olive oil
2 pepperettes, diced
6 slices chorizo, diced
1/2 teas dry basil
1/2 teaspoon oregano
1 teas black pepper
1 teas sea salt
10 Eggs, beaten
2/3 cup salsa
1 cup shredded jalapeno havarti
Preheat oven to 300 F. Saute vegetables in oil till golden. Set aside to cool. Mix all ingredients together. Be sure veggie mixture has cooled slightly before adding to egg mixture. Scoop into regular muffin tins. Bake for 30 minutes or until centers are firm. Makes 24.
