Killing Carbs

Thanks for all the support and advice for the previous For the Post-Ops post! So here we go! A suggestion was to be more accountable and this is my attempt. I will be here to complain, rant, rave, be happy, rejoice, etc. on a more-daily (that would be mostly daily) basis. So as my first topic of inquiry: WHAT DO YOU EAT ON A DAILY BASIS? I need ideas people. I lived on chicken and cheese for about a year so any ideas on no-carb eating would be appreciated!

Here's my favorite day:

Breakfast
1 egg omelette with 2-3tbsp of 2% cheddar.  Use the good eggs like free range with omega-3.
2 slices of center cut bacon (2 of these slices = 1 slice of regular bacon).  Center cut has MUCH less fat.

Lunch
A protein bar (Detour from Sam's is my fav...tastes like Snickers)
or
Leftover taco meat with cheese, sour cream, salsa.  Basic tacos without the shell.  About 1 cup worth.

Dinner
Parmesan-Crusted Tilapia fillet topped with good spagetti sauce and lowfat mozarella cheese

Late night
1 cup of fiber yogurt (Yoplait Honey Vanilla my fav)

Hey Winnie- Sorry to Hijack the post, but do you make your own Parmesan crusted tilapia or do you buy it somewhere? Can you post the recipe.

Awesome menu by the way! I try to watch the carbs, but sweets call my name!

Those are some good starting ideas! Thanks! And, alas okcgirl, I am right there with you in terms of the sweets calling my name. I believe that is how it all started... the slipping back into the bad habits thing. I would think "oh one little piece of chocolate won't hurt anything, besides I just don't eat that much" but in reality, I was eating more than I realized and more often than I should have... even when not hungry. So, the moral.... STAY AWAY FROM THE SWEETS! They will only cause more trouble than they could ever be worth!

Believe it or not, Sam's sells the tilapia.  Go to the frozen section and it's in a yellow/beige bag in the fish section.

Cook them just like the package says.  When done, take them out, place a good dollop of your favorite pasta sauce on top, sprinkle liberally with lowfat mozarella and any other pizza/pasta cheeses you like, place under broiler until cheese is crusty.  It's a great meal for us WLS patients!!

BTW, that's lunch today!!  MMmmm!!

You're much further along than me, so I hate to sound like I know it all, but here goes...

For protein I eat: low fat cottage cheese, l.f. cheese slices, tuna salad (a little splenda makes dill relish taste like sweet), egg omelet with l.f. cheese & some veggies, turkey sausage (they make everything from Italian to Andouille), stewed beef & vegetables (with a fork), baked fish, skinless chicken thighs or really moist breast poached in chicken stock, white chili or regular chile, a few of the very best bites from my husband's steak, etc.

I've been having fun trying new recipes or adapting old recipes to fit my new life. Warming leftovers in the microwave is a bad idea because it dries out the meat too much unless it is a soup or stew. I add a little water to a pan & reheat things on the stove top or in the oven. When nothing else works, I eat beans (but I spice them up and try different kinds). Home cooked ones seem softer than canned.

Make a game out of it & keep experimenting. My husband has lost about 15 pounds eating my experiments and has enjoyed it. He could stand to lose another five or ten, but isn't even overweight, let alone obese.

Now this doesn't follow the WW regimen, but if you have to have chocolate, have you considered buying a few pieces of really good, expensive dark chocolate that you would ration to yourself? My cousin, who has always maintained her weight through diet & exercise, says this is how she keeps herself from feeling deprived.

Good luck!

because it has been cold.....  I have been eating soups that are thick,  drink liquid out of stew first, always add cheese to it, ham and beans, and taco soup.  I eat meatloaf, steak, and fajitas.

Recipes:
Warm up tomato juice and add a huge tablespoon of ricotta (got this from the sleeve forum from another member and can't wait to try it!!)

I LOVE ranch beans (about 2 tablespoons) on lettice, with diced tomatoes, a couple of slices of avacado and 2 tablespoons of cheese. It's a WONDERFUL 'taco' salad and soo filling and full of flavor.

I also LOVE tuna salad on seaseme crackers. Or on a bed of lettuce.
Tuna salad mix:
can of tuna, drained
1/4 cup diced celery
2 tablespoons diced green onion tops
1 tablespoon diced pickles (sweet or dill, your choice)
1-2 tablespoons light mayo (I only use kraft 1/3 mayo made with olive oil)
mix and chill and then serve 1/4 mixture on 2 or 3 torn lettuce leaves (however much you can eat) and save rest for another meal and it only gets better as it chills!

My family loves soups so I buy the 12 bean cajun style mix of beans and soak them and then simmer them for nearly a day before I add the suggested ingrediants on the package. I use turkey sausage for regular and my guys can't tell a difference!

I love heated pinto beans in chili sauce (if you can find them) and add some cumin to them and serve them with mexian cheese, home made salsa, and garlic powder mixed in them for dipping with tortilla strips. My kids enjoy that as I enjoy just having a 1/4 cup of the dip!

I make red beans and rice and just don't add rice to my plate.
red beans recipe:
1 turkey kalbosa sliced and then diced
1 large onion sliced
1 large bell pepper sliced
1 can red beans NOT drained
*saute sausage for several minutes to get a nice browning on the sides
*add onion and pepper and saute till tender crisp
*add beans and heat till hot and then serve!

Jambalaya:
Normally you make it with rice, but you can omit the rice and just enjoy the veggies and meat!
Recipe:
1 large onion, diced
1 large bell pepper, diced
2 stalks celery, diced
1 turkey kalbosa, diced
1 chicken breast, cubed
I can diced tomatoes
1/2 bag frozen jumbo shrimp
garlic, onion powder, chili powder to your taste

*brown sausage and chicken on the outside
*add diced tomatotes to pan and simmer for 10 minutes
*add veggies and simmer another 10 minutes ****il veggies are crisp tender)
*add shrimp and simmer till they are heated through and serve

In post op serving sizes these are VERY good choices when you select low fat cheese and forgo the sour cream (even the light is way calorie I think). The ranch beans are higher in fat then the pinto in chili sauce so I normally just go with the pintos for my taco salad and it's just as yummy!

There are a few no/low carb recipes for you! If it's just you then I'd cut the recipes in half at least. Sorry I have to feed a husband, 18 year old and three little boys! hehe
