The only negative thing about it is that they aren't organized, so you have to read post after post, but the subject line helps. :) Also, not too many people put the nutitional info., which drives me crazy, but you can use sparkpeople's recipe calculator for that. :)
Check out my daughter's chicken zucchini pizza recipe (I just corrected the amount of zucchini to use). You could add as many more types of veggies as you'd want to, most likely. :)

Thought your list was going to be real short....
so here goes....
On parchement paper spread you green beans or zuccini add spices..ie garlic onion, sale pepper for me i add some red pepper flakes...take extra virign oil and lightly sprinkle and then cover and nuke till tender...
or on a cookie sheet spread carrots, onions the zuke and tomatoes sprinkle extra virgin olive oil season with you favorite seasonings and roast in the oven till tender usually I set it for 375 and cook till tender...
the trick to healthy eatting is not to bubbles the veggies cause that takes away alot of nutritional value..and u want to cut out fat...
another thing I do is use beef or chicken bouliion cubes in boiling water then add the beans...I never cook them till they lose the pretty green...and I dont use alot of water.....
...i tried this last nite...turkey bacon wrapped around zuccini and bake added some seasonings and it was awesome....
