I cook Pinto beans with all sorts of spices.  I use garlic, Mrs. Dash, oregano, and basil, plus salt and pepper to taste. I usually add some lean ham.  Icook them all day in the crockpot.  I guess chicken breasts would be good too.

have you tried Indian food?  do you like it if you have?  I found this wonderful lady online that cooks indian food and even does video of it all...she is awesome and most of her food is vegetarian, with garbonzo beans and all...I use alot of her recipes and change them up a lil when i want to add mean but I dont really like alot of meat....

her website is http://www.manjulaskitchen.com/

give it a try...most of the stuff you can find in a regular store and there is one ingredient she uses a pinch of in most of her recipes that I have never used since I cant get it around here but the recipes are still great.

I cook pinto, kidney & great Northern's all the time and I cook them all the same way. My momma taught me and her momma from Louisiana taught her.

I start by browing several pieces of bacon (cubed up or you can use salt pork or ham) a large onion and some minced garlic in a stock pot. I wash and inspect the beans and toss them in the pot. I add some tony's creole seasoning, garlic powder, black pepper and adobo seasoning ( I measure nothing sorry). I add about 6 cups of water and bring to a rolling boil. I turn the burner to low and just let it cook for several hours. Add water if needed.

They also sell a bag of mixed beans at most grocery stores, I cook them the same way and they are SOOOOOO yummy!

Do you like lentils?  I made Ina Garten's Lentil & Sausage soup last week, and I think it's a new family favorite.  The only one that didn't like it was DH, and he's looney tunes anyway.

Here's the recipe.     I only used one large yellow onion, and I subbed in turkey kielbasa.

I have a recipe that I love.
2 pounds of ground beef browned
1/2 cup onion (browned with beef)
1/2 cup green pepper (browned with beef)
1 can pinto beans )
1 can pork and beans
1 can kidney beans
1 can great northern beans
chili powder to taste
Simmer until all flavors are melded together.
I put this dish in a 9x13 pan and top with biscuits and bake in the oven on 425 until biscuits are done. The whole family loves this recipe. I don't eat the biscuits, but did before surgery. I got this recipe off the back of a pillsbury biscuit can.
