Creamy Pico Chicken

5 boneless skinless chicken breasts
1 jar pico de gallo
1 can black beans, drained & rinsed
1 c (or the whole bag if you like) frozen sweet corn
1 8 oz block fat free cream cheese
Shredded mexican cheese to top

Throw everything EXCEPT the cheeses into the crock pot, cook on high at least 4 hours.  Shred or serve whole.  (I prefer shredding, makes it go farther.)  In the last half hour of cooking, add the cream cheese.  Just before serving, mix well.  

The rest of the family gets it served over rice.  I just put mine in my little bowl and go to town.  NOM.

My 5 qt crock pot is probably 3/4 full, so it makes a LOT.  It freezes really well, thankfully, because I suddenly had only 3 people to feed.  The two biggest appetites went out for sleepovers.

Sounds so delicious!!! I made Chicken Taco Soup tonight which is sorta similar to this recipe, so I'll have to wait a few weeks to give it a try, but I'm definitely going too!
