I had some apricots that needed eating-so I chopped them up in a small sauce pan and added a little apple juice and brown sugar splenda and some cinnamon  and lime juice and poached them down to kind of a thick mushy texture-then poured that over a bit of soft goat cheese.

It would have been good without the cheese or over cream cheese or ricotta too.

I went to the store but there were no apricots so I got some nectarines to try the same thing with.

Remember me, I don't cook and I don't like fruit-so it must be good.

Sounds yummy. I have a new recipe in the crock pot as we speak. It is apricot chicken. Hoping it is yummy. I am not a fruit eater either.

That actually sounds delicious.  Wouldn't that be a good thing to serve at a party over a block of cream cheese?

Must be a full moon because I cooked tonight too.  I made some veggie lasagna with zucchini and it was really tasty.  Actually was very soul satisfying and helped me scratch my Italian itch!  (there are other things I could've done to scratch my Italian itch but if I go into details, everyone will think I turned into Thomas!  LOL!)

Hope you are feeling better after your procedure!  Can't believe you had to gain some weight!  I'm sure it wasn't nearly as fun as it sounds but how would I know???

That does sound really good.  Add some lemon juice next time, too, it'll kick it up even more!!

I made some nummy greek flounder tonight.  Matthew, my 6 year old, swore at first that he didn't like it, then all of a sudden his plate was clear.  Hm...must have changed his mind!!

It really must have been a full moon cuz I cooked 2 nights in a row! Last night it was steak on the grill and tonight I threw a pork tenderloin on the grill and it was sooooo yummy. I find that a lot of meats that I do not normally care for are way better on the grill!
