Tuna Muffins

Hi, Everyone.
Tuna muffins may sound gross, but they're very good! Someone posted the following recipe on one of the forums, and she had gotten it from another post (although she couldn't remember). Anyway, I added sunflower seeds to the mix and adjusted the nutritional information to reflect that. I ate a muffin hot out of the oven, and it was really good. I'm going to try one cold tomorrow, for lunch. Next time, I might melt some 2% shredded cheddar cheese on top. If you do, just measure, write down the nutritional information for that, divide by 12, and add what you get to the nutritional info. below. (I'm sure you knew to do that. It's the teacher in me.)
I think I'll take these to my next support group meeting, for the taste test. If you make them, let me know how you (and your family) like them.

Tuna Muffins

1 (5 oz.) can tuna, in water (drained)
3 eggs
2 c. 2% low-fat cottage cheese
1/2 c. sunflower seeds (I used Kroger Roasted, Unsalted Sunflower Kernels)
grated onion, to taste
Salt & Pepper, to taste

Mix together, by hand, and fill 12 muffin tin cups (sprayed with Pam) 1/2 full. Bake at 350 degrees for 30-40 minutes (the longer time makes a more firm muffin).

Fat: 4.4 grams
Carbs: 2 grams
Protein: 11 grams
Fiber: 1 gram
Sugars: .25 grams

These muffins sound really really good.  I'm going to try some of these this weekend!  I'll bet some canned chicken would be good too.  I'm all about changing things up for me these days.  I've gotten really stuck in a rut about what I'm eating.  This would be a quick fast breakfast for me in the mornings!!!  Thanks Mary.

Yes, I bet canned chicken would be good, also. The next time I make them, I think I'll bake 6 instead of 12, to get a better portion size (for those of us who can eat more now). Even at that, 186 calories, 4 carbs, and 22 grams of protein is good. :)

Thanks for posting this Mary, I also saw this recipe I think on the recipe forum maybe but didn't copy it down.  It looks like it would be very good.  Think I will try it one day this week.  Thanks again.

I saw this and had to look twice...
these are similar to a popover my Mom use to make excet she used ground up turkey...
being healthy has its rewards....take the challenge and just do it

Another ingredient to try (ground turkey), as well as canned chicken. :)
