As for something without a lot of prep? I love the Marie Callendars dinner kits at Wal Mart! They look AND taste gourmet and it takes hardly any time at all to make them.
From scratch, however, I'll share a really good recipe with you. You season it according to how much you use and I never cook the same amount, ever. I find this also quick to prepare and my 3 year old LOVES it.
Chicken thighs or breasts (boneless skinless)
Whole green beans (frozen or from a can, but drain if canned)
Potatoes, cut into small bite-size pieces (I use Yukon Gold)
Good Seasons Dry Italian Dressing seasoning (use straight from package, dry)
Sprinkle of Parmesan Cheese
Cook at 400* about 25-45 mins, depending on the amount you cook. Cook covered with aluminum foil to seal juices.

Call me crazy bit buy a rotisserie chicken from Wal mart or any store, make a salad, buy the whole wheat rolls cut them in half, mix up some margarine with garlic powder spread on the rolls bake till crispy, then for dessert..take any 2 boxes of sugar free pudding ( I use the cheesecake) mix using one cup milk and mix then add a container of sugar free fat free cool whip mix that in together with a can of crushed pineapple drained.pour that into a fat free or reduced at free graham cracker crust decorate with a lime slices and place in the fridge... this is simple but its a meal...
OH and one last thing RELAX and breath for drinks make rasberry tea...and dress to kill

I make a savory chicken cheese cake that is wonderful! You can make it in muffin tins or in a regular cake pan. You can easily half this recipe. I also use this as a filling for enchilada's but add more shredded cheese. This recipe actually won 2nd place in the Made in Oklahoma Recipe contest only I used shredded beef. It is something you will be able to easily eat but not much because it is rich. This seems hard but it is really quick and easy to make. Okie's Kicken Chicken
Cheesecake Serves 8
Pam Spray
2- 8 oz Packages of Cream cheese
1/2 Cup Sour Cream
1 Pkg. Taco Seasoning
2 Eggs
5 corn tortilia's
1 Cup grated sharp cheddar cheese
2 Cups cooked chicken, chopped or cubed or shredded (I use the cooked chicken from Sams or Walmart.
1 Small 4.oz can chopped green chilies( do not drain)
1 T. Chopped Jalapeno Peppers (from a jar )
1/2 Cup chopped green onions
Optional Garnish and topping
1/2 Cup Nacho flavored Dorito's crushed(totally optional)
1 Package Pre-packaged Guacamole
Remaining 1/4 chopped green onions
Preheat oven to 350 degrees. Spray the bottom and sides of a 9 inch pan. I used a 9 inch spring form pan. Tear the corn tortilia's into pieces covering the bottom of the pan. Give the tortilia's a spray of Pam, to give a light coating. Mix the softened cream cheese, 2 eggs, sour cream and package of taco seasoning until well blended and smooth. Stir in 1/2 of the grated cheddar cheese reserving the remaining for the topping, add chicken, chopped green chilies, and jalapeno peppers.Only add 1/2 of the green onions. You are reserving the remaining for the garnish. Do not mix this step with the mixer. Stir until well blended. Pour mixture into greased pan Bake for 45 to 50 min. Mixture will not giggle when done. Remove cheesecake and while hot, sprinkle remaining cheddar cheese over the top to melt. Sprinkle remaining green onions over the top. Followed by desired garnishes. I serve ours with the Crushed Dorito's and 1 to 2 T. Guacamole. Let stand 15 min before cutting and serving.
The chips will soften if left on for a long length of time, so I recommend putting them on before serving, as with the Guacamole. This one is very rich!!! You can use left over roast to it instead of the chicken or even left over pulled pork. I use a spring form pan but it will work in any cake pan.

season with a little salt and pepper, garlic powder and paprika.
Coat with Parmesan cheese.
Spray microwave safe dish with cooking spray.
Microwave for 4 minutes.
Broccoli with cashews
1 lb fresh broccoli, cut into bite size pieces
1/4 cup of butter
1 tbs brown sugar
2 tbs soy sauce
1 teaspoon white vinegar
1/4 teaspoon ground black pepper
2 cloves garlic, minced
1/3 cup chopped cashews
Steam the broccoli (I use the microwave steam bags)
Melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil then remove from heat.
Mix in the cashews and pour sauce over the broccoli.
Box of rice pilaf.
It's all ready in 30 minutes or less!

Ok you asked this in a public foum knowing that I might even respond....here goes the best idea I can give...
You can cook him anything you want.... just wear a smile.... and some socks.... if you did that, then I'm certain that he will enjoy the meal....a bowl of frosted corn flakes with a wonderful lady-person wearing nothing but socks can lead to a wonderful, fruitful relationship . It's just my opinion...but I'm a guy so I would take it seriously....
Ok for real....meat....men like that... grill something... or better yet....ask him to grill it...make him feel like he's in control (haha illusion)....but men like that kinda thing and it decreases your stress level too so you don't have to guess whether you're a good cook or not...(which i'm sure you are...)
To find out if he's sophistcated, buy some "spring mix" salad and just some newman's balsamic vinegrette and watch to see if he eats it..... he might be a keeper....just know... all men are evil....we don't want to be...but we always have alterior motives...mainly sex... great food helps keep us happy too...hehe...

I ended up doing the Okie chicken cheese cake! Thanks Okiechick! I only nibbled on a bit of the chicken out of fear of the carb monster, but it had good flavor and the jerk i made it for like it alot. He actually asked to bring the leftovers home with him. Come to find out this looser has a live in girlfriend who is only 20 and he's "just not sure how much longer it's going to work" I was so steamed when he told me that. I asked him why she wasn't the one fixing him dinner then and he said "I spend enough time with her while i'm working, on my days off I do what I want" Needless to say , I suddenly had to go pick up my son right after I shoved what remained of the dish into a throaway rubbermaid bowl, and handed it to him. Telling him "something had come up" (little did he know it was my dinner, over him being such an @$$) and "that my mom needed me to relieve her of her babysitting duties" He concluded the nightmarish evening by saying "I'd really like to see you again" to which I replied "I'm sorry but I only date single men" as I rushed him out the door. I swear! How do these loosers find me!!???
