When I was in your position on the pre-op diet, one of the guys in support group told me to just keep it simple. Eat some sliced deli turkey and a handful of carrots and be done with it. For some reason, that made sense to me so that's what I did. I just tried to eat what I knew I should be having and quit focusing on it so much.
You will lose the weight and you will have your surgery. Please don't give up! It's too life changing to give up!

I was told that I was hardeheaded and could not get a surgery date till I lost 40 pounds. I did it on the presurgery diet which was great training for the post op life.
it is so hard to lose weight when you are doing to get a surgery date. My rally point for you is this...if losing weight was an easy feat none of us would be having wls. SO take a hot bubble bath relax and find something to do that you enjoy.
Then write yourself a letter, as to why you want this surgery what it will HELP you do and where you would like to be...set mini goals for yourself....dont think of losing ten pounds by a certain date break it down to losing a pound every few days...make it simple for yourself.
As for ideas....I make a meatloaf using turkey and lean beef and oatmeal plus regular goodies you would put in it. Instead of cooking it all at one time I make mini loaves and freeze them. So when I want one I take it out and either crock pot it or oven bake it...
I also make a faux lasagna...I take fat free cottage cheese fat free mozzeralla and layer it between eggplant or squash with spagetti sauce and then topp it with more cheese...
It gives me the pleasure of lasanga but not the guilt.
I also make a taco soup using turkey, two different kinds of beans and some fat free tortillas...plus fat free cheese...
I even take chicken and marinate it with caribbean jerk sauce and bake it ....and if potato salad is what you crave use cauliflower instead of potatoes....
