Chicken at Wal-Mart & Target also Atkins Store

A few days ago it was mentioned on here about a good chicken product that some of you purchased at Wal-Mart and Target in the frozen food section.  I don't live in OKC, but went there today and was looking at Wal-Mart and could not find what I thought you had mentioned.  Does anyone remember the name of the chicken or what company that made it?  Also is there an Atkins store in OKC, if so where is it?

The chicken product that Wall Mart carries is in the frozen food section in one of the chest type freezers.  There are two chicken breasts in a box and several different varieties.  They are stuffed with cheese and or other things.  Very tasty.  I can only eat about 1/3 of one of them still.  Target also sells a similar one.  Yes, there are some Atkins in OKC.  There is one at 63rd and May as well as on the east side of Lowe's at Penn and Memorial across from Quail Springs Mall.  I'm sure there is one on the south side but I'm not familiar with it.  You can go to the Yellow Pages and just enter Atkins and Oklahoma City and it should pull up all the address for you.

This is the ride of my life.....what an amazing tool I now have!!!

The chicken breast at Wal Mart are Sam's Choice brand and Debbie was right about where it was located.  It's in the freezer chest section, not the big freezers with the glass doors.

The health food stores is Akins and their website is www.akins.com .  The one I go to is at Memorial and Penn in northwest OKC.

The Target chicken is in their fresh meat section close to the deli counter.  I went to buy some of the chicken breasts stuffed with spinach and feta last night and they were out!  Poo!  So I bought crab stuffed tilapia instead and it was yummy!  Fab-u-lous!

I just sent Marsha a PM to ask about this chicken, but I was looking in the upright freezer section, not the chest freezers.  Our Target is not a super Target, so very little food.  Didn't realize there was an Atkins store at 63rd and May.  Is it in French Market?  The crab stuffed tilapia sounds great too, but am terrible at cooking fish.  Can't seem to get it right, whether I try to bake it or fry it in a little EVOO.   Then I always seem to get sick on fish.  Any suggestions on cooking?

Look at our Muffin Man becoming a Mini Muffin there. You ar edoing great on your diet. I myself do ok with fish so I don't have any suggestions there but I do know I have doen the tilapia fillets in a foil packet with a touch of butter, lemon juice and italian herbs and only baked for like 10 minutes of so till it was flaky and it was like heaven to me. Thin fillets such as tilapia don't require alot of cooking and can be over cooked and drird out easily which of course the foil packet helps keep in the juices too.

The Akins at 63rd and May is across May west on the SW corner of 63rd and May.  It's next door to Pets Mart.

I love tilapia and salmon so thought I would share a couple of EASY recipes.

For tilapia filets,
sprinkle with salt, pepper, garlic powder, paprika, in that order.
coat with Parmesan cheese.
place in microwave safe dish coated with cooking spray
microwave for 3 to 4 minutes.
That's it.  It's one of my favorite quick and easy meals and is delicious.  It's also great for lunch the next day.

For salmon filets,
Preheat oven to 350
lightly coat one side with mayo (I use the mayo with olive oil)
sprinkle with dill
sprinkle with garlic powder
OR
sprinkle Chef Paul's Magic Salmon Seasoning (I can find this at the Homeland that used to be Albertsons in Yukon)
place in dish coated with cooking spray
bake for 15 to 20 minutes.
I mix the leftovers with some more mayo and use it as a spread on a pita for lunch.

Lori - that tilapia sounds great!  I'll bet the parmesan cheese just makes it.  Do you use fresh parmesan or that stuff in the green canister?

I usually use the DiGiorno (sp?) that comes in the plastic container in the refrigerated section.  If I don't have that, I use the green stuff.....Honestly, I can't tell a big difference.
