Ingredients

 
3T. ground almonds
2/3 c boiling water
1 pkg. (4 serving size) lemon flavor sugar-
free jello
1 cup 2% Cottage Cheese
8 oz. Fat Free Cream Cheese
2 cups thawed Cool Whip Free


Directions

 
Sprinkle hlaf of the almond crumbs onto side of 9-inch springform pan or 9-inch pie plate sprayed with cooking spray.
Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Cool 5 minutes. Pour into blender. Add cheeses; cover. Blend on medium speed until smooth, occasionally scraping down side of blender. Pour into large bowl. Gently stir in whipped topping.
Pour into prepared pan, smooth top. Sprinkle remaining crumbs around outside edge. Refrigerate 4 hours or until set. Remove side of pan just before serving. Store leftover cheesecake in refrigerator.

Okay.  I made it with 1% Cottage Cheese (it's all I had)  which takes another 2 grams of fat, six carbs and 40 calories out of the entire thing, you can do the math for the one piece.  I LOVE IT !!!   I'm definitely going to keep hold of this recipe and tweak it to try to get the carbs down even lower.  (Sugar Free cool whip?  Fat Free Cottage Cheese?)  It will be a while before I can do it again.  I still have 7 pieces left to eat ; )  And, no, I'm not sharing. P.S.  The two cups of cool whip is one 8 oz. container.  FYI

THis is interesting.  Here are the nutritions on the Fat Free cottage cheese and the sugar-free cool whip.  FOR 1/8 of pie, 106.7 calories, 3.5 grams fat, 2.3 saturated fat, 4.8 cholesteral, 295 grams sodium, 10 carbs, 1.7 sugar, 8.3 protein.  I guess you need to pick your poison ; )

This sounds awesome.  I LOVE cheescake!!!  I think it'd be good topped with some fresh strawberries...yum!!!  I'm going to try this next week for sure.
