The harder ones may be a little rough to eat for people less than a year out of surgery but there are hundreds of good ones to choose from.
I used to shop there once a week at lunch and get the small packs for snacks. They have a TON of really good jerky. No Man's Land is by far my favorite. Very smoky. They have their own house brand that's really good. Hard Times and Robertson's are a little tougher but very well flavored. There's also game jerky and stuff like turkey jerky.
Think about what you like and ask the store clerk. They know just how they all taste and can point you in the right direction!
