The Chicken Experiment.

Okay I finally made the chicken with coconut flour, flax seed, and panko bread crumbs.  WOW it was good.  This is how I made it.

1 egg beaten
1/2 cup of coconut flour
1/2 cup of flax seed
1/2 cup of panko bread crumbs
crushed red pepper and black pepper blend
crushed garlic
3 boneless skinless chicken breasts.

Dip the breasts in the egg then into the flax seed, then the panko.  I might actually dip into the Panko crumbs first next time THEN the flax.  It's hard to get the crumbs to stick to the danged chicken.  I then cooked them in the oven at 400 degrees for about 20-25 minutes, turning them once.  When you turn them the crumbs kinda fall off and you have to rake them back on.  But OMG was it tastey and moist and just like Deb said the panko and flax add a nice crunch.  I used a little hot wing sauce for dipping and ate 1 1/2 of the breasts for dinner and saved the other 1 1/2 for another meal.  next I am going ot try to make onion rings and zuccuni this way.

Thanks for sharing this Dan. I might run over to Akins this week and pick up some coconut flour and the flax seed. What is panko?

Panko are Japanese Bread Crumbs.  I believe I saw some at whole foods in Tulsa...I don't know if you can get them at Wal-mart, but they make a nice crunchy coating!

mmmmm, that sounds good good good.

I don't have any chicken in the house and it's icy outside-so I'm going to try a salmon croquet made with coconut flour and some panko-I may be out of flax seed, I'm out of something that I forgot to get.....

I mix the flour, panko and flax together and dip in the egg then dip in the mixture.  The flour makes the whole thing stick, the panko and the flax add the crunch.  Man, I wish I had some chicken right now.

I have chicken!!!!
However;  I have no coconut flour, flax or panko....so I too am stranded without what I need!  It's on my list to get before I have surgery or right after, but till then.....it's just chicken!
