Crunchy coating for veggies

I like to make crispy veggies in the oven-fun finger foods, dippable in ketchup.  Anyway, today I used a concoction of 1 part coconut flour, 1 part whole wheat panko bread crumbs and a good shake of ground flaxseeds.  Dipped various chopped up veggies (some broccoli crowns, cauliflower and a couple of zuchini fingers) in egg, then rolled in the mixture and baked at 350 for about an hour.

Crunch factor was off the scale.  I didn't season enough because I wanted to see what the coconut flour did for the taste (not much) but it did help the whole thing stick better.

This is probably supposed to be a side dish, but I make it as my only dish and jus****ch my protein closely for the rest of the day.  MMMMM MMMMMM Good! 

It's also good with a shot of chili powder in it, cayenne if you like the hot and of course, garlic.  I salt when I'm finished and ready to eat.

PS, when I pulled those bad boys out of the oven, Oliver the Parrot screamed "GOOD LORD!!!!" so they must have looked good.  (he'll never know, he didn't finish his broccoli spear, so he got no crunchy veggies from ME).

They have one price shipping, so when I go to that site I usually allow myself X amount of dollars-it's one of those places that have lots of cool stuff that adds up in a hurry if I don't limit myself.

OHHHHH I got my syrups from there, but that is all I was looking for so I didn't think about ordering anything else. I'm going there to look up some things.

Oliver has moved into the kitchen almost full time and must comment on every dish and food item.  I think he was food critic in another life.

This sounds so yummy! My favorite thing is the Oliver story too.  I've never had birds and he sounds so funny.

Oliver came to me the day before my Dottie dog died last year-I've always kind of thought he was my special angel to take over where she left off (bossing me around mostly).

But I will also be the first to say that you really need to WANT a bird-they are messy critters, and the big ones can bite like a snapping turtle, and they really are happier if they can fly around, so if having a big bird flying through your house isn't your thing, a parrot probably isn't for you.

Ok-Oliver is loose when I'm home-he has a perch and a couple of other "regular places and I keep paper under those, but yes, every now and then he poops somewhere he shouldn't and I wipe it up and it doesn't bother me.  But I know that's not for everyone.   And, every now and then he opens the cabinets and tosses food on the floor, etc.-so consider these things before bird ownership...LOL.

DH used to have birds. They love to fly free in the house! The tops of our door framing is pecked up pretty bad.  lol    I love animals and a certain amount (who am I kidding - a LOT) of mess comes with them. I would not be able to have birds with our dogs and kitties.   

Do you other critters chase the bird?
