Recipe for Turkey Leftovers

I saw this recipe on Barbara Thompson's newsletter  this afternoon and it looks really good.  For all who have turkey leftovers you might want to try it:

Louisville Creamed Turkey

·         3 tablespoons butter

·         3/4 cup sliced mushrooms

·         3 tablespoons flour

·         1 1/2 cups 2 % milk

·         1/2 cup hot chicken broth

·         1 small jar (2 ounces) diced pimiento, drained  (Optional)

·         4 cups diced cooked turkey, light and dark meat skin removed

·         seasoned salt, to taste

·         ground black or white pepper, to taste

Preparation:
Melt butter over medium-low heat. Sauté mushrooms until golden and tender. Add flour; stir until smooth. Slowly our on milk and stock, stirring constantly, until thickened and bubbly. Add pimiento, chicken, and seasoned salt and pepper. Coo****il heated through, but do not boil.
Serves 6

Nutritional Value per serving:
209 calories, 9 grams fat, 19 grams carbs, 25 grams protein

Sounds good! I do something similar and turn it into turkey pot pie -- in fact making it tonight. I don't use milk and add a bag of frozen mixed veggies. Put it all in a baking pan with pillsbury bisquits on top then pop in oven until the bisuits are golden. The kids would rather eat the bisquits so they can have "mine".

I'm so glad you made it through your 2 weeks and get to have mushies today!!!  Be careful, eat small, very small bites and chew chew chew!!  I still have trouble with scrambled eggs of all things!!!  ENJOY!!!!

The recipe sounds good.  We're making crock pot tortilla soup with our leftover turkey today.
