Decadent Chicken Recipe
I had some of this at work today, and it was WONDERUFL. It smells even better cooking in my crockpot right now! You early post-ops, proceed with caution.
As most of you know, I experiment and adapt recipes to fit our new rules. Here goes this one..
I don't know the name of this so I'm calling it "Brenda's Decadent Chicken" in honor of my co-LMS.
6 cooked boneless skinless chicken breasts and stock (Or 3-4 large cans pre-cooked white chicken)
2 cans 98% reduced fat/fat free Cream of Chicken
2 cans of milk of choice (1 or 2%, Silk, etc.)
1 package fat free cream cheese
1 small package Light Velveeta (2%)
Frozen corn
Hash browns (if you want to be naughty...you don't have to put them in)
1 large can green chilis undrained
She sautees an onion, but we don't eat onions so that didn't go in there either.
Cook the chicken or open the cans. Dump in crock pot and add the rest of the ingredients. I did mine on high to be ready for DH to be home in a little while, then I reduced it to keep warm.

This is probably a slider food, but it stayed with me all afternoon, so it can't be all bad!
