Recipes for after first month RNY

HEY FRIENDS:   does  anyone  have  a  good  recipe for  chicken  and/ or  hamburger  that
a  gastric bypass  newbee  could  get down and  enjoy. I have  crumbled  fried hamburger and it  went down  ok  but not too   much  flavor.  Does  anyone  try  burritos  w./ refried
beans??   I  really need some  help on  what  to eat  now that I can try  Real  Foods.
What  kind  of   cheeses  can  I  eat  now??    I need help cause I am getting frustrated with
what I can eat  and am at a loss what to  try.   But I must  admit;   I am getting  a  little hungry
now  and  I remember  how food used  to  taste.  I would like  that again   at   some  point.

There are many recipes on the recipe forum if you go to the top of this page and click on the blue forum and then go to recipes.  I have one that I like that Cat59 posted a while back.

5 smaller zucchini (peeled) sliced this horizontally You can add egg plant or use both!
1 lb ground turkey breast (browned)
3-4 ripe large home grown fresh tomatoes (sliced)If none available, I have used Ragu 
8oz of pepper cheese  (This will not make this dish hot)
1 egg slightly beaten
1 cup cottage cheese

Microwave long slices of zucchini for about 2 min
slice tomatoes, brown ground turkey breast, add eggs and cottage cheese together.

I spray my dish with Pam, the add some tomatoes (or sauce) the layer of zucchini then browned turkey, then cheese, then zucchini, then pepper cheese.
Alternate layers like lasagna. top with sauce or tomato slices you can sprinkle Parmesan cheese on top.  Bake for 30 minutes at 350 and enjoy.  This is a family favorite

Here is another one for Refried Beans from Cat59

Easy FIesta Refried Beans

1 can ff Refried Beans (Great Value from Wal-Mart are cheap and work great)
1 can Ranch Style or regular pinto beans drained
1/2 c Salsa (I use Pace Picante usually)
1/c shredded cheese any flavor

Mix all together in pot on stove top until smooth. Pour into pan and top with more cheese. Bake at 350 for 10 mins or until cheese is melted. For a 9x13 pan, double the recipe.

Go to www.theworldaccordingtoeggface.blogspot.com She has alot of good recipes. My favorites are the different kinds of Bites that she makes. Just type in bites under her search and they should all come up. Hope this helps.

I learned most of it from the best...my OH friends!!!       I do know that we have to get creative and cannot afford to get bored with our eating.  This is no diet and it just is the way of life for us now...it's AWESOME at that!!!

Here is another one that Nancy gave is all.  It was awesome and my DH loved it too!!

Nancy's Pulled Pork

Ingredients:
1 tablespoon butter
2 pounds boneless pork roast
1 tablespoon Cajun seasoning, more if you like it spicy
1 medium onion, chopped
4 cloves garlic, crushed
4 cups water
1 tablespoon liquid smoke flavoring

Directions:
Cut the pork roast into large chunks. Season generously with Cajun seasoning. Melt butter in a large skillet over medium-high heat. Add pork, and brown on all sides. Remove from the skillet and transfer to a slow cooker.

Add the onion and garlic to the skillet and cook for a few minutes until tender. Stir in the water scraping the bottom to include all of the browned pork bits from the bottom of the pan, then pour the whole mixture into the slow cooker with the pork. Stir in liquid smoke flavoring.

Cover and cook on high for 6 hours, or until meat is falling apart when pierced with a fork. Remove pieces of pork from the slow cooker and shred. Return to the sloww cooker to keep warm while serving. if desired, add BBQ sauce after meat is removed from cooker.

**** I used a generous amt of cajun seasoning and it was not too spicey. I used onion and garlic powders (my son is picky about the real stuff). After shredding the meat I dumped out the liquid, tossed the meat with BBQ sauce and returned it to the cooker for a few minutes. This made a good amount of meat. Plenty of leftovers!

Another good recipe or idea came to me from HappyCat.  Use a ff tortilla as your pizza crust, spread some pizza sauce over it, top with turkey pepperonies and top with any veggies, onion and lots of cheese on top.  Bake at 400 until cheese is nice and bubbly.  I usually just eat the toppings but once in a while I'll eat very little of the ff tortilla because it is baked crispy.

I think you could eat the middle out of the bean burritoes.  I also order chicken enchiladas when we go out and eat the chicken mixture out of the tortilla...yummy.  I eat some of the beans off my husband's plate as well.  We always share when we go out.  I'm a "cheap" date.
