Fast and easy chicken enchillida's
one pack on skinless boneless chicken breast (2 or 3)
one can rotell
one can green chilis
Put in crockpot on low and cook all day.
When you get home.
Make a white sauce with sour cream
1 TBSP butter
heat
add flour and mix
add milk and mix until creamy
add 1/2 container FFSour Cream
Lay a tortillia in a small glass baking dish.
Using a small ladel use two scoops and fill the tortillia up, roll it up
Continue until pan is full
cover with white sauce, and shredded cheese, bake at 400 for 15 mins, or 45 if you make it and freeze it (which is what i do)
Enjoy with some FF refried beans.

I can always think of creative things to put in your mouth, but that's for another forum...
As for some food, go to the recipe forum and I've put everything out thre from Low carb PF Chang's lettuce wraps to scallops, to no-pasta lasagne....so there's TONS of tuff in there from me and some others that you should find creative...

1 lb ground beef, browned and drained
1/2 large red onion, diced
1 tbsp minced garlic
1 can pinto beans, drained
1 can red kidney beans, drained
1 can sweet corn
1 can of diced tomatoes
2 cans of stewed tomatoes, Mexican style.
1 can of Rotel (I use the regular)
1 pkg of Ranch dressing mix
1 pkg taco seasoning
1 can of sliced black olives
Add all ingredients in large pot after browning and draining the hamburger. Bring to boil and let simmer for 1 hour. Serve over corn chips or tortilla chips, top with cheese.
Really great and you can freeze leftovers for later.

I'm sorry you can't eat meat. That is what saves me. Watermelon was great! I tried it in August and can't wait until next year so I can have it during the summer. I found I can eat a lot of it!! Ya know, every now and then you just want something you can have more than a few bites of!!
What about tuna? I buy those Tuna lunch to go kits and mix that up at work and throw away the crackers....well most of them.
I love tilapia and it is quick and easy to fix. What about lunch meat can you eat that? roll it up in a slice of cheese. Of course scrambled eggs are yummy and I like the ones from Grandys because they are very soft/moist. Can y ou have beef if it is in Wendy's chilli? It is very small ground up and lots of beans and other stuff in it. It is pretty soupy so it goes down nice. I put cheese and sourcream in it too.

You have had lots of great suggestions here. Revisit the meat later and make sure it's not cooked on a flat grill..that could be part of the problem. Also, Jess told me that Outback marinates its steaks in butter before throwing them on the flame to make sure they don't stick. That explained the horrible pain I had and why I was the restroom 5 minutes later kissing the porcelain throne.
I make a lot of the same recipes that I did before, only modifying them to fit the new rules. In 4 months, I've repeated recipes maybe 3 times. It's something new every night. I try lots of stuff from new cookbooks and cooking magazines.
Lunchables with just meat and cheese, turkey burgers, turkey bacon, etc. Salads made with spinach, chicken fajita meat, cheese, etc. and those soy garlic things from the Nutrition Store as croutons. I ate a lot of salad, and I still do.
