Tonight for dinner so what is on your plate?

I hope everyone had a good day despite the yucky weather.  I owe glittergal a recipe and since I can't go to the dinner this week (whining) because of school that night, here is the recipe I am fixing for dinner tonight.  I will have to post back in an hour and let you know if everyone including me liked it.

Chicken Picata

4 chicken breasts
flour
salt/pepper
1 cup chicken broth
1 cup chopped mushrooms
1 cup chopped onions
1/4 cup capers
1/4 lemon juice
dash parsley
small amount EVOO

salt/pepper and coat the chicken breasts in flour.  Brown them in a small amount of EVOO.  Once browned removed cooked chicken.  Heat 1 cup broth in the same skillet.  Once boiling add the chopped onions and mushrooms.  Cook for 6-8 minutes until tender (some of broth will evaporate).  Add lemon juice, capers, and dash of parsley.  Add the chicken back in and cook for another 5 minutes or so until chicken is done.

Oh yeah, meant to ask everyone what all they ate today.  I had 1/2 a egg and cheese buritto with as much tortillia torn off as I could from Sonic. Close to lunch I had a handful of honey roasted peanuts. Then had mandrian chicken with veggies from Panda Express for lunch.  Afternoon I had a SF fudgesicle.  Now I am cooking the chicken and will let you know how that goes.

Today I made Lynette's crock pot chicken, the one with the salsa and beans and chicken breasts I put alot of onions in and also added some black olives, it was so good i had it for lunch and then again for supper, Oh i also had a scrambled egg w/onion and cheese for breakfast, let us know how your Chicken Picata turns out, looks like something i will want to try.

It was great!!  My husband loved it and wants to make it a regular recipe.  I think next time I will use half the amount of lemon juice and capers.   It was a bit too strong for me.

I can't wait to try Lynette crock pot chicken.  It sounds sooo good.

Today I made a big pot of Taco Soup for the family. Lots of leftovers, so froze in small container to pull out for a quick lunch or supper when I am by myself.

It was delicious, everyone loved it and it was something I could eat.
