Tonight for dinner, I am having chicken tacos on low carb, whole grain tortillas.  Yummy!  I use chicken thigh and breast meat, mixed together with taco seasoning.  Very good flavor!

On the chicken breasts -- at my Wal-mart they have a chest-type freezer area in the meat section where they have frozen chicken breasts.  These are on the same side but all the way down on the other end of that freezer.  They come two in a package.  I usually can only eat a third to half of one.  I just plop it in my George Foreman grill (frozen) for 6 to 8 minutes.  You can also get much the same thing at Sam's.  And don't forget the crockpot Mexican chicken.  In a small crockpot, put 2 chicken breasts, 1/2 packet of taco seasoning, 1/2 c. salsa, 1 can black or pinto beans.  Turn that baby on low and leave it all day.  When you get home shred up the chicken, serve with lf sour cream and shredded cheese !!  YUMMY.   You can give DH a tortilla, if you're being nice, and let him make a taco, but I don't miss it.  During the football games lately I've been having pork rinds with bean dip or salsa.  Can't eat many, but I get a crunch while everybody else does !!!  Cowboy also put a crusted porkchop on the recipe site that I'm dying to try.  To find the recipes go under the other Forums under Home and Baking and Cooking.  There some diehard cooks give some good ideas.  Check it out !!

Oh my gosh Lanett I cannot wait to try these.  I'm going to put the chicken in the crockpot tomorrow morning for dinner tomorrow evening....I love crockpot ideas!!  Thanks for sharing.

I don't but you could and it would just make it thicker.  PS  I don't even worry about thawing the chicken, I just throw them in there first so the get really done but not too done !!!

I've got a few standbys.  It's that time of the year to get that baby out so dinner is hot and ready when we get home!!  I'll try to make a copy and bring it to the meet and greet of some of them.

Yummy ideas folks! 
I have adapted some of my Weigh****cher's recipes to use.  I also make pizzas fairly frequently (on low carb tortilla but usually eat the stuff off the top only).  I fix taco meat and stir in a can of refried beans.  I have grilled hamburger patties and had bunless burgers or put mushroom gravy on them.  I get a meal from restaurants and eat at least 2 more times.  Tuna salad feeds me for 2 or 3 meals.  I made chicken noodleless stoup (thicker than soup) last week- yummy!  I plan on making hamburger stew soon (one pound ground beef, package of stew seasoning, package of frozen veggies of your choice, cumin.) Tilapia or salmon grilled on the Foreman with lemon pepper seasoning.  I have found that eggs do better for me at dinner so I have breakfast for dinner sometimes.
I have maintained for one year at this point.  I am steady at -120 pounds.  =)

Well I know that I owe Lynette some dinner....so maybe she'll have some leftovers for you after I fix her some meals and she freezes them...hehe...

 I had homemade hummus and carrots tonight.  Hummus is super easy to make.  Take a can of chick peas and drain.  Put them in your food processor.  Add olive oil, lemon juice, salt, pepper (I like cayenne), a couple of garlic cloves and blend to your hearts content.  If you have a food processor you've never used before, remember to see how many cups it holds and put in that amount or less (otherwise, the juice goes out the side and makes a big mess)    Also, I've learning new (for me) cooking methods at Rose State College every Wednesday night.  We are baking fish tomorrow night.  So far, I've learned how to bake chicken with a wet rub on top so it doesn't dry out but my beef steaks were not the best.  

If you are really adventurous, go to the Asian food market off Class in OKC and pick out some fresh veggies to grill.  I grilled bok choy - cut off the flappy ends, drizzle the leaves with olive oil or PAN and put some salt and pepper on them.  Yummy!!!

Egg Bake
Pam some custard dishes, one for each serving.  In each add about 1 to 1 1/2 oz. frozen chopped spinach, layer about 1 tbls. artichoke & tomatoe antipasto in a jar, crack an egg on top of that with salt and pepper and then pinch of parmesan and bigger pinch of mozarella. Cover with foil then put custard dishes in a baking pan with about 1/2" of water and put in oven at 350 for 20 mins. Take off foil for 10 more mins or desired doneness of egg.  This is still good the next day and warmed in microwave.
