What's on your plate?
Kim, I have put no less than 12 high-end recipes out in the recipe forum that everyone loves....so yo should go out there and ponder the low carb options that make a lot of other little tummys happy. Lynette, Cindy and a few others from the Oklahoma forum have tried and loved them....so give them a try...

I would give advice, but what do I know yet! lol Besides I am a strange eater! lol Here are some thoughts from me....I don't know what you can have but I'm sure these could be changed up.
I have cut out rice, pasta and bread so that I will be used to it later...I experiment alot too.
I chop avacado and green onions and put in cottage cheese or just add salsa to it.
I slice up chicken tenderloins, cut up onions and green peppers and put a bit of water in a pan and brown all of it up and just eat it with a veggie. You can add mushrooms...whatever. I season everything with garlic and seasoning salts too..
I open a can of cream of chicken soup and add chinese veggies that are drained well....That is good if you season it up with wasabi paste and soy sauce. I usually add a couple chicken tenderloins.....
I also love seafood, so I eat oyster stew alot...as well as just a plate of shrimp.
I make a sheppard pie and freeze it. I use a can of vegitarian vegetable soup...throw in some lean browned ground hamburger, put a slice of american cheese on top and then top with a thin layer of mashed potatoes(I don't know if you can have that but I still can so far) It basically just has to be rewarmed. I use Weigh****cher trays to freeze it for other meals. The chicken soup and chinese veggies can be frozen too, so you can make how much you want and freeze for meals later.
I brown up lean ground beef and freeze to put in dishes and do the same with sausage. It can be tossed in eggs and add a few green onions, or what ever.
I make my own lean meatballs too to freeze and just warm up.
I Make a lean meatloaf and slice it up into portions you can eat and freeze the rest.
I also make salsbury steaks and freeze the rest....
What I do is make a huge bowl of lean ground beef and then make the meatballs, meatloaf and salsbury steak all at the same time.....I use different things towards the end of the recipes so after adding the eggs and seasonings I divide it all and finish off the recipes. It sounds like an all day event but it really isn't and you have many meals to eat on later. It saves alot of time too!
I also add different meats, green onions and like spinich or asparagus then different cheeses into muffin tins and just add eggs and cook a couple dozen of these up. I freeze for quick breakfasts....I make these for my daughters when they go on the lean diets, because it is easier to make alot at one time.
I'm all about freezing meals to save time can you tell????
I love refried beans so I am set for stage 2. I like to add green chilie enchilada sauce to it to thin it down and add some zip.
Taco salad with no bowl....you can cook and season the meat, divide it up into size portions and freeze the rest for salads later...Here I go again freezing things!
It's almost chilie time and time for soups too!
