Spicy Cabbage Casserole...for Wolfie
OK, I just noticed that Wolf-N-Boots requested this. It isn't spicy to me, but the creator of the recipe, Tommy (who is an AWESOME chef, btw), his brother is a wuss and labelled it as spicy, soooo...
1 lb ground beef or ground turkey
1 lg. onion, chopped
1/2 bell pepper, chopped
6 tsp garlic, chopped
1 tsp salt
1/2 tsp pepper
1/2 tsp oregano
18 oz can tomatoes (your style, i got Rotel with green chiles)
1 (8 oz.) can tomato sauce
1/2 c raw rice
1 cabbage (about 2 lb), shredded
1 c grated cheddar cheese (you can use american if you want or any other cheeses)
butter for baking pan
preheat oven to 350. fry together first 7 ingredients after mixing them well together. fry in small amount of light oil. when completed, remove from fire and set aside. mix the next 3 ingredients (tomatoes, tomato sauce and rice) together thoroughly in a bowl and set aside.
shred cabbage, set aside. cut or grate cheese, set aside. mix together all fried ingredients (first 7) and tomatoes and rice mixture real well. in buttered lasagna or rectangular pan, layer 1/2 meat mixture, 1/2 cabbage and 1/2 cheese. repeat layer, ending with cheese. cover pan well with aluminum foil. bake covered for 1 1/2 to 2 hours.

Ahh I was thinking this was what I thought it was. My mom used to make this when i was a kid and I loved it. Now that being said, shouldnt we not eat rice or is the rice so dang tender after cookingthat long that it wont bother Grumpy? I am ready for cooler weather so I can make caggage and hamburger stew...yummy

I had RNY and have never had an issue with rice, to the point that sushi is my must have food of the week. The rice in the casserole does get VERY tender, however, there is not much of it in the recipe, so you could probably omit it if you think it may cause an issue. Ya may wanna cut back on the liquid in the recipe a bit, tho, if you do, since rice soaks up the excess.
mmmmm..cabbage and burger stew sounds YUMMY! Ooooo..so does taco soup and white chicken chili, and cabbage soup, and..damn..now I am in the mood to cook...

Unfortunately, I am STILL not there...I stayed behind to get the house readied and up on the market. I will be here in H-town until it sells, or December, whichever comes first. Siiigh, this 2 household thing stinks, especially since I don't know how on Earth to scale my recipes down for a smaller amount of people. Man, you don't realize how little you eat until one recipe makes 3+ meals, lol
