Eggplant Cutlets

We all know I don't like to cook-but at Akins I found some eggplant cutlets in the freezer section-so I'm thinking I could use those in my lasagna....hmmmmm.......I still haven't tried the zuchini lasagna cause it's just so dang hot I don't want to cook or even eat anything heavy.

Sounds good!  Let me know how they are.  I love eggplant and I want to make the lasagna but haven't gotten my act together just yet!

i keep buying eggplant and then giving it away or letting it go bad in the fridge cause i am not brave enough to try it.. one of these days i will.. i think!!

I love eggplant-but one eggplant was always difficult to consume on my own before surgery-now it's really not possible.....In Dallas you could buy roated eggplant in jars and that was greatness-because it wouldn't go bad.

 Go to the Asian supermarket and check out the mini egg plants.  I slice them in half, brush with olive oil or spray with Pam, sprinkle with seasoning and grill or broil.  I go to the Super Cow Nguyen off 23rd and Classes by the Milk Bottle.  They have the best vegetable produce.  Every so often they carry purple sweet potatoes from Hawaii.  The part you eat is purple and it has a lot of nutrients that regular potatoes don't have.  donna

Donna donna donna-are you sure those purple sweet taters aren't tarot?  It's used to make poi, and I am a poi aholic.

I made eggplant "lasagna" last week-end...came out pretty good, quite impressive for this non skilled cook - only thing is I put ricotta cheese in it and next time I won't. Needless to say, I ate it, on and off for 4 days...(till I got tired and made my husband eat the rest)!!!
