I got creative in the kitchen again
I went to the Farmer's Market today and got a whole bunch of fresh veggies, so I decided I was going to make something tonight that I could put them all in. Here goes...warning, it's a little spicy.
1 lb ground turkey meat
2 medium tomatoes, seeded and chopped however you like (I did big chunks)
1 medium zucchini, diced
1 medium jalapeno or 2 small, seeded and diced
1 regular banana pepper, seeded and diced
1 medium yellow squash, diced
1 small can mushrooms, drained
1 can cannelini (sp?) beans, drained
1 can navy beans, partially drained
1 can Rotel, drained
Chili powder
Seasoned Salt
Spice and Herb mix from the same brand that makes the really good creole spice
Salt
Pepper
Olive Oil, or your favorite
Brown the turkey meat first seasoning with chili powder, spices and herbs, salt, pepper, and seasoned salt then set aside in separate dish. Then in the same pan coat the bottom in the oil. Put your zucchini, squash, and both peppers in the pan, add salt and pepper, saute until tender. When it's fork tender, add in meat, beans, mushrooms, Rotel, and tomatoes. Add more chili powder to this and stir it all together. Let it simmer for a few minutes until the liquid has been mostly evaporated, spoon into bowl and enjoy!!!

I'm not very creative...although when I make tacos or like today when I made chicken quesadillas (I just ate the meat and cheese) we call it Mama Bell instead of Taco Bell! or Mama Bueno!
I love veggies! I bet it is just as wonderful without the spice! My family is squaking for some dinner...I guess at 9:30 at night I am a little late....lol....I better feed them...I had no idea it was this late already!!!!

It sounds really good to me. I saved it to my collection of recipes. I really like the spicy, so I'll not seed the peppers. Thanks for sharing this with us.
