Cat, thanks for posting your refried bean recipe! It's simple to make and so Yummy! : ) The only changes I made was that I used a potato masher to mush up the drained pinto beans and I added a little more salsa on top of my individual serving. Thank You ... it made for a wonderful lunch! : )

You're very welcome! I love it too as does my family! I make it a lot. I don't do the sour cream thing. The original recipe didn't call for that. I use more salsa and cheese. Pace Picante Sauce is my bud..

Same here.... I didn't add sour cream either. ; ) Just a little extra salsa on the top before eating! :  )

Here it is from Cat's post on the Ketosis thread: *Fiesta bean recipe that I've posted a gazillion times is wonderful: 1 can ff refrieds 1 can pintos or ranch style beans drained 1/2 cup salsa or picante 1/2 cup cheese Mix all together on stovetop until smooth. Spread in 13x9 pan. Cover with major amounts of cheese and broil for 5 minutes or till cheese is brown.  I don't broil mine. I baked at 450 till cheese is good and melted. I got this from MSN healthy eating and make it a lot. At my house, it's usually Mexican something or other and I've been experimenting a lot lately with chicken recipes.*
