Tuna Recipe

I don't know who all out there likes tuna casserole, But I made my own little mock up of that. At Crest they have little 3 oz packets of tuna, I used one of those, I drained it first though, it comes with a little extra juice than I would like, then I put in about a tablespoon of FF Miracle Whip in with shredded Colby Jack cheese, salt and pepper. I microwaved it in my little tupperware bowl, for about 30 seconds, and OMG it was so good!!! I thought my taste buds were going to explode. I've gotten so used to flavorless stuff the past 2 weeks, and I put that in my mouth, and I didn't want to stop eating because it was so good. I was able to eat about 2 oz, or about 2/3 of the total finished product with the cheese and mayo and everything, but I would think that somehow you could expand this recipe and make it for your family. It would be great with broccoli or asparagus on the side. Just thought I'd share my newest discovery in the world of healthy food!!!

Michelle, I'll give that a try, too! I'll just have to blenderize the tuna. Next Tuesday I get to advance to soft food and stop pureeing things. Hallelujah!!! : )

Michelle - that sounds really good.  I am really getting kinda tired of regular tuna salad.  I've always loved tuna casserole so I'll give this a try!  Thanks for sharing! Kim
