New recipe I want to share

I am always lookiing for new recipes that taste good and work with protein requirements. I found this one that my family loves. Easy Fiesta Beans (from http://lifestyle.msn.com/foodandentertaining/recipes) 16 -ounce can fat-free refried beans(cheap kind is ok) 15 ounce can no slat added pinto beans, rinsed 1/2 cup prepared salsa (picante works too) 2/3 cup grated cheddar cheese, divided This says to broil, but I baked..still worked great. Combine all beans, salsa and 1/3 cup cheese in a medium saucepan. Cook over medium heat, stirring, until the mixture is hot and the cheese is melted. Spoon the bean mixture into a 2-qt baking dish and sprinkle with the remaining 1/3 cup cheese ( I drenched mine in cheese). Broil until the cheese is lightly browned about 2 minutes. I baked mine until the cheese had melted. My family loved it. I hope you do too!

sounds yummy I am going to try it the next mexican night we have... yes we are one of those weird families that has themed nights...lol a couple times a week usually... the kids have always enjoyed it so we do it as often as our time allows.. sometimes the kids like to to themes of what they are studying in school.. like a few weeks ago Denny made some very strange italian dishes.. it was interesting to say the least..lol

You're welcome! My 16 year old says this is one of his favorite things that I make now. I'm trying lots of new recipes because I'm bored. We eat a lot of Mexican food. I found some great pouch friendly recipes on Yahoo foods as well.
