Good pouchy!
Today my hubby took me to Rosa's Tortilla Factory for a late lunch. It was awesome! I ordered a full plate (refried beans, mexican rice, taco, and 1 cheese enchilada). I ate 1/2 the cheese enchilada (it had a nice soft corn tortilla falling apart) and a couple bites of guacamole. It was wonderful and my pouch loved it!
DH ate the rest except the other half the enchilada and my guacamole. I brought that home for tomorrow.
Then tonight I had about 1 ounce rotisserie chicken and a heaping tablespoon of sour cream and chive mashed potatoes. WONDERFUL!
The chicken was so moist I didn't need to put it in the food processor.
I am so happy I've gotten to sit at the table with my family finally. Even though I eat so tiny amounts of food, it still takes me as long (longer sometimes) than the rest of my family to eat because I have to chew chew chew. It's just nice to have that piece of my life back. Family time is so important to me.

I'm simply amazed at your diet at this stage of the game. I haven't had rice since before surgery..and I really want an enchilada but even more so a chilli relleno.
So far, Taco Bueno's queso on their Mexican salad makes my pouch happy..I'm wondering about tamales. I haven't tried them yet...I've been very careful to stay on the doc's diet as much as possible..
Oh I haven't had rice either. DH ate my rice. All I ate was part of the enchilada and a couple bites of guacamole. I tasted the beans but was afraid of the unknown fat content.
I've been given the go ahead to try salad, but as much as I want it, I'm afraid of it.
The surgeon said flaky rice was ok like uncle bens but I'm still afraid. I've done potatoes, saltines, and corn grain based things (like corn bread dressing and the corn tortilla from the enchilada), but I'm really afraid of rice and flour based things.
I'm going to be giving cottage cheese pancakes a try this next week because they only have 2 tbs whole wheat flour per 2 pancakes. The rest is cheese. I'm hopeful my kids will like them, too. :)
